Weeknight noodles with whatever's in the drawer

A formula, not a recipe. Swap the vegetables for whatever is going soft.

What you do

  1. Boil the noodles. Save a mug of the water before you drain.
  2. Mix soy, vinegar and sugar in a cup.
  3. Fry the aromatics hard for 30 seconds, then the vegetables until they're nearly done.
  4. Add noodles and sauce, toss, splash in noodle water until it coats instead of pooling.
  5. Fry an egg in the same pan and put it on top.

The noodle water is what makes it taste like a restaurant instead of sad stir-fry. Don't skip it.
