Brown butter chocolate chip cookies

One extra pan, and everyone asks what you did differently.

What you do

  1. Brown the butter in a light-coloured pan until it smells nutty and the solids are dark gold. Cool it slightly.
  2. Beat in the sugar, then the egg and yolk.
  3. Fold in flour and soda, then the chocolate.
  4. Chill the dough at least an hour — overnight is better.
  5. Bake at 180°C for 11–13 minutes. They should look underdone in the middle.
  6. Flaky salt on top the second they come out.
