Cold-night dal with too much garlic

Twenty minutes of work, then it sits and gets better. The garlic is not a mistake.

What you do

  1. Rinse the lentils until the water runs clear — skip this and it tastes like dust.
  2. Fry the garlic and cumin in a good glug of oil on medium until the garlic is just going gold. Pull it off before it browns or it turns bitter.
  3. Add turmeric and tomatoes, cook two minutes until it darkens.
  4. Add lentils and four cups water. Simmer 25 minutes, stirring now and then.
  5. Salt properly at the end, not the start. Squeeze lime over each bowl.

It's better the next day and freezes flat in a bag. If it gets too thick, water — not stock, it's already rich enough.
