One-pan lemon chicken and potatoes

Everything in the oven at once. The potatoes cook in the chicken fat and that's the point.

What you do

  1. Toss potatoes with oil, salt, oregano and the juice of one lemon. Spread in a roasting tin.
  2. Sit the chicken on top, skin up, seasoned well.
  3. Slice the second lemon and tuck the slices between the potatoes.
  4. Roast at 200°C for 45–55 minutes until the skin is properly crisp.
  5. Let it sit five minutes, then spoon the pan juices over everything.

Don't crowd the tin. If the potatoes are stacked they steam instead of crisping.
